How do you find the good local food and not just tourist traps?
Every city has that street where every restaurant has a guy out front with a menu. How do you consistently eat well instead?

Walk 10–15 minutes off the main square before you even look at a menu. Skip anywhere with photos on the menu or a host waving you in. Eat lunch where the tradespeople eat (noon–1, full of locals, one-page menu). And ask the person checking you in where THEY eat on their day off — not where they send guests.
